The Ardent Epicure

An Ode to the Pleasures of Food

Ravioli with Mushrooms and Langostinos

Here is a quick and fairly simple meal we tossed together using mostly pre-made products. It was delicious, and you can customize it however you like (note that this is not a recipe, just a guideline).  This meal should take approximately fifteen to twenty minutes.

What we used:
Langostinos (frozen)
Pre-sliced mushrooms
Frozen ravioli (two types)
Bottle of tomato sauce
Microwave potatoes
Frozen vegetable mix
French bread
Various spices and herbs

  Ravioli and Greens

Boil your favorite ravioli, with olive oil and a little salt. While that is boiling, add butter and olive oil to a pan on medium to medium-high heat.
  Butter and Oil

Once the butter is melted, add the mushrooms and cook for a couple of minutes, stirring every so often, then add the langostinos (we thawed the shellfish and patted them dry before using).

When these start to cook, add your favorite spices and herbs to taste (we used salt and pepper, garlic, Italian seasoning, and some crushed red peppers, along with some crystallized ginger).

  Mushrooms and Langostinos

When the mushrooms have absorbed much of the oil and the langostinos have started to shrink a bit, add a jar of pasta sauce, stir it into the mixture, and re-season to your liking. We also grated some asiago and toscano cheeses into the sauce.
  Pasta Sauce

Once the pasta is done, drained, and plated, add some sauce on top, and sprinkle with parmigiano reggiano, or your favorite cheese. Serve with vegetables, sliced cheese, potatoes, and sliced bread sprinkled with olive oil, sea salt and pepper... Enjoy!
