Food of the Day- Langostino
Langostinos, often called langoustines (which are actually a breed of lobster, and entirely different), actually refer to squat lobsters
; but they are not really lobsters at all. In fact, they are more closely related to certain types of crab
. However, they are used frequently in place of lobster due to the similarity in both taste and texture, as well as lower price.
No matter what you call them, they are controversial little suckers, but oh how delicious…
Here is a bit of a twist on a Creole Dish:
Creamy Langostino and Endive Salad
What will you need?
One bag of langostinos
(Trader Joe's
carries them frozen)
¾ cup Mayonnaise
1 tablespoon French aioli
1 tablespoon Whole capers
¾ cup Mayonnaise
1 tablespoon French aioli
1 tablespoon Whole capers
Place above ingredients (minus endive and chives) in a food processor on pulse until mixed well. Add salt and pepper
to taste.
Place langostino
tails in a bowl.
Slowly fold in your sauce until the tails covered well.
Place the mixture in your refrigerator
for about an hour.
Now take your endive and separate each leaf, washing thoroughly.
Arrange the endive leaves on a platter or on individual plates.
Fill endive leaves with you sauce
mixture, and sprinkle with chives.
And serve…This appetizer is generally enough for a party of six. Enjoy!
