Making Your Own Pasta

What you will need:

1 1/2 cups all-purpose flour or unbleached flour
1 1/2 cups whole wheat flour
1/2 teaspoon sea salt
4 eggs
2 teaspoons olive oil

Make a mess:

On a large wooden cutting board
Empty your all-purpose and wheat flours
Now add your salt
Mix this up a bit
Ok make a mound in the center of your board
Make a hollow with your fist in the center
Add the olive oil and eggs to that hollow
Mix it together with a fork until it starts to come together
Flour your board and hands a bit

Now kneed until your dough becomes stiff and stretchy
Cover with a cotton towel or cheese cloth
Let it sit for about 30 minutes or so
(Now do the above again)
I just meant the kneading part
Put some more flour on your board
Grab a rolling pin an flour it
Roll it out by hand to desired thickness

Or just use a Pasta Machine – They are great and most have attachments for most any kind of pasta

Note: Fresh past cooks quickly if it is floating it is done!
