Express-ive Meals - Artichoke Pasta Salad

Artichoke Pasta Salad

What you will need:
4 ounces or Tri Colored  Cheese Tortellini Pasta
or Tri Colored Pasta Bows
or any medium sized pasta
1 6 ounce jar marinated artichoke hearts
(do not drain juice)
1 small jar whole button mushrooms
1 small can garbanzo beans
1 cup cherry tomatoes
1 cup black olives, pitted
1/2 cup feta cheese, cubed
Extra virgin olive oil and white balsamic vinegar
Fresh ground pepper and garlic salt to taste

Lets get cooking:
In a large pot bring water to rolling boil
(add a bit of olive oil and salt if desired)
Add tortellini to boiling water, until floating and tender
Or other desired pasta, until al dente
Strain and cool pasta under cold running water
Place chilled pasta in a large serving bowl
Add full jar of marinated artichoke hearts
Add garbanzo beans, drained
Had sliced cherry tomatoes, mushrooms and olives
Give a taste test and add desired amounts 
of vinegar and oil
 (note you may not want to add additional)
Add garlic salt and fresh ground pepper to taste
Add feta, and fold salad until all ingredients
are well coated 
Serve chilled


Variations:
You can try a few of these added to your Pasta Salad
Broccoli fowerets
Capers
Roasted red peppers
Tofu cubbed


    Pairing:
    A Pinot Grigio will do nicely
