An Ode to the Pleasures of Food

What are Blini?
Russian pancakes
A small pancake traditionaly made with yeast and buckwheat flour
Traditional in both Russia and  parts of Eastern Europe

Note: We will not be using yeast in our recipe

What you will need:
1/3 cup buckwheat four
1 teaspoon raw sugar
1/2 teaspoon sea salt
1/2 teaspoon baking soda
1 large egg plus 1 large egg yolk
1 cup sour cream
Zest of 1 lemon
Olive oil or vegetable oil
1 ounces of salmon roe

Lets get cooking:
In a medium bowl, whisk together flour, sugar, salt and baking soda
In a small bowl, combine egg, egg yolk, half of your sour cream and half of you lemon zest
Stir in your dry ingredients (your batter should be a bit lumpy)
In another small bowl, combine remaining sour cream and lemon zest
Heat your lightly oiled griddle or frying pan over medium heat
Work in batches of about 1 tablespoon of batter per blin
Cook for about 2 minutes or until bottoms are golden brown
Flip and cook additional 1 minute
Top each Blini with lemon sour cream, roe and chives

Makes aproxemitly 1 1/2 dozen
Total prep and cook time 25 minutes

A good crisp white wine, try a Spanish Verdejo
But of course there is always Champagne
