Recipe - Buttermilk Pancakes with Pineapple Syrup

Buttermilk Pancakes


What you will need:
2 large eggs
1 ½ cups flour, sifted
1 ½ cups buckwheat flour, sifted
3 tablespoons fine raw sugar
1 teaspoon salt
2 teaspoons baking powder
4 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
2 ¼ cups buttermilk

Lets get cooking:
In a large bowl, beat eggs on high speed with an electric mixer, until foamy
Add remaining ingredients; mix with wire whisk until smooth 
Heat griddle to medium/high, lightly grease
Dispense batter onto griddle with a ladle, until bubbles form
Tip: Hold ladle close to surface as you pour batter for a more uniform shape
And fluffier pancakes
Flip and continue to cook to a golden brown about 3 minutes
Serve with fresh cream butter and pineapple syrup

Pineapple syrup
What you will need:
1 quart pineapple juice
2 tablespoons apple cider vinegar
2 tablespoons brandy
1/2 vanilla bean, split lengthwise and seeds scraped
1 cinnamon stick

Let’s get cooking:
In a large saucepan, combine all ingredients 
Cook over high heat, stirring occasionally
Continue to cook until your liquid is reduced by half, approximately 25 minutes
Strain out vanilla beans, seeds and cinnamon stick
This can be prepared up to twenty four hours ahead of time, and refrigerated
Bring to room temperature before serving
