Creamy Caesar Dressing

What you will need:
2 large cloves garlic, minced
3-4 anchovy fillets
1/2 teaspoon dry mustard
1 tablespoon lemon juice
1/2 teaspoon fresh black pepper
, ground
1/2 teaspoon salt,coarsely ground
1 egg, at room temperature
1/2 cup olive oil
1/4 -1/2 cup Parmigiano-Reggiano
, finley grated
Mix it up:
In food processor, blend garlic, anchovies, mustard, until mixed
Add lemon juice, black pepper and eggs
Slowly drizzle in olive oil mixing until creamy
Blend in cheese a little at a time until smooth
Makes six servings
Note: If you do not have anchovies, you can substitute an equal amount
of light meat tuna (packed in oil) and capers
