Recipe - Gruyère and Rosemary Scones

Gruyère and Rosemary Scones


What you will need:
2 cups flour
1 teaspoon lemmon juice
1/2 teaspoon baking soda
1/2 teaspoon salt
2-3 tablespoon fresh rosemary, finely chopped or ground
1/4 cup grated Gruyère cheese
4 tablespoons unsalted butter, chilled
3/4 cup milk

Mix it up:
Sift all of the dry ingredients together into a bowl, add the herbs and cheese
Cut in  butter until the mixture is coarse and crumbly 
Make a well in the center, and pour in the milk, blending rapidly to form a soft dough
Note: Do not overmix
Place on a lightly floured surface, knead the dough briefly to smooth out any cracks
 Pat dough into a seven inch circle about 3/4 inch thick
 Use a sharp floured knife to cut into 8 triangles

Lets get baking:
Place on a parchment lined cookie sheet,about 1 inch apart
 Bake in a preheated oven at 450 degrees,until golden, about 15 to 17 minutes
Cool about five minutes on wire rack
 Serve warm
Makes eight scones

Pairing:
Herbal Tea
6 tablespoons fresh hebs, or 3 of dried
Place your herbs in a glass pot or bowl, add 2 1/4 cups boinling water
Allow to steep covered five minutes or more, strain and serve
Garnish as desired, serves two
