Recipe - Jambalaya

We are going to start by prepairing our own creole sauce;
you can purchase a pre-made creole sauce in most specielty markets
if you prefer...

Creole sauce
What you will need:
2 tablespoons olive oil
1/2 cup celery, chopped
1/2 cup chopped green bell peppers
1 cup onions, chopped
2 tablespoons garlic, chopped
2 cups tomatos, peeled and chopped
1/4 cup fresh basil, chopped 
1 tablespoon  fresh oregano,chopped 
2 teaspoons  fresh thyme,chopped 
1/8th teaspoon cayenne pepper
1/4 teaspoon ground black pepper
 Salt, to taste
2 teaspoons Worcestershire sauce
3 cups chicken stock
1/2 cup green onions,chopped
6 tablespoons butter, at room temperature

Prepare your sauce:
Add oil to a hot saute pan, saute onions, celery and peppers
Saute 2 to 3 minutes, until just wilted
Add garlic, tomato and herbs, continue to saute about 1 minute
Season to taste with, cayenne, black pepper and salt
Stir in the Worcestershire sauce and stock
Bring to a boil, simmer covered about 12 minutes
Stir in butter and green onions

For Jambalya
What you will need:
1-2 cups creole Sauce
2 tablespoons  Olive Oil
1 pound andouille sausage, thinly sliced
1 pound boneless chicken, cut into 1/2 inch pieces
1 onion, finely chopped
3 stalks celery, thinly sliced
1 red or yello bell pepper, diced
1 cup  rice, parboiled
2 1/2 cups water
1 pound medium shrimp, peeled and deveined
2 tablespoons cilantro, chopped

Lets get cooking:
Place a large cast iron skillet over medium-high heat until hot
Add oil and sausage,stirring constantly, about 5 minutes, until  browned
Remove sausage, set aside
Add chicken and sauté for 3-4 minutes, stirring constantly
Add onions, celery and bell pepper; sauté until soft, about 5 minutes
Add rice, water, and Creole Sauce
Cover and bring to a boil
 Reduce heat to low, simmer for 20 minutes,or until almost all liquid is absorbed
Add shrimp and sausage to the pot
Cover and cook for an additional 5 minutes or until shrimp are pink
Remove from heat and let stand for 10 minutes
Garnish with cilantro and serve immediately

A good choice for a red would be a Cabernet or Cabernet Blend
Along with some freshly made Hush Puppies!
