Recipe - Mediterranean Style Cod

Mediterranean Style Cod
The art of dining well is no slight art, the pleasure not a slight pleasure -
Michel de Montaigne 

What you will need:
2 teaspoons extra virgin olive oil
1 large onion, finely chopped
2 (8 ounce cans)  tomatoes, chopped and drained (reserve juice)
1 bay leaf
1 clove garlic, minced
1 cup dry white wine
1/2 cup reserved tomato juice
1/4 cup lemon juice
1/4 cup orange juice
1 tablespoon fresh lemon zest
1 teaspoons fennel seeds, crushed
1/2 teaspoon fresh thyme, finely chopped
1/2 teaspoon fresh oregano, finely chopped
3 large leaves basil, finely chopped
Salt and pepper to taste
1 pound cod fillets 
2 cups mozzarella cheese, shredded or sliced
(you can also use provolone, or a mixture of cheeses)

Lets get cooking:
In a medeum sized skillet, heat oil
Saute onion and garic, until translucent
Add all remaining ingredients except fish and cheese
Stir well and simmer 30 minutes, uncovered

Arrange fish in a baking dish,
 cover with  cheese then sauce 
In a preheated oven at 375 deegres Bake, uncovered for 20 minutes
or until fish flakes easily
Serves four
