Recipe - Moroccan Lamb Kebabs

Moroccan Lamb Kebabs

Moroccan dishes rely heavily on spices such as, cumin, cinnamon and coriander
There foods are influenced by Middle Eastern, Arabic, African and Mediterranean cuisines


What you will need:
1 1/2 pounds leg of lamb, cubed
18 dates, whole and pitted
3/4 cups extra virgin olive oil
1 lemon, zested and juiced
2 cloves garlic, finely chopped
1 teaspoon ginger, grated
1 teaspoon cumin, ground
1/4 teaspoon turmeric
1/4 teaspoon cinnamon, ground
Salt and cayenne pepper to taste
18 wooden skewers



Marinate:
Combine all ingredients with 1/2 cup olive oil
Including lemon juice and zest
Add cubed lamb to marinade
Refrigerate for 1 to 4 hours
In meantime soak 18 skewers in water



Lets get cooking:
Tread each skewer with 1 lamb cube 
then 1 date and then 1 lamb cube
Place kebabs on a lightly oiled grilling pan
Grill over medium-high heat
for about 4 minutes on each side
Continually brushing with your marinade juice

Pairing:
A Petite Sirah with it's mildly peppery undertone
would do well here
