What you will need:
1 cup chocolate chips or shavings
5 tablespoons sparkling white grape juice
3 large egg yolks
1/2 cup sugar
3/4 cup heavy cream
1 tablespoon raspberry jam
Here we go:
In a heat-proof bowl
,combine chocolate
, butter and 2 1/2 tablespoons grape juice
Set over a pot of water on a low boil
Stir until melted, let cool
In another heat-proof bowl
, over heated water, whisk egg yolks, sugar, and remaining grape juice
Continue to whisk until thickened 3 to 5 minutes
Set at room temperature until cooled
In an electric mixer
, whip heavy cream until softly peaked
Transfer 1/4 cup to small bowl and chill
Let remaining cream stand to room temperature
Then fold the chocolate mixture in with cream
Spoon into individual dessert cups
and chill
Stir raspberry jam into chilled remaining cream
Top each mousse with raspberry cream and chocolate shavings
