Recipe - Savory Turnovers

Savory Turnovers

 Mushrooms And Pepper Turnovers

What you will need:
1 cup mushrooms, sliced
1 cup red and green bell peppers, chopped
1 large onion, finely chopped
1 large egg
1 glove garlic, minced
1 cup ricotta cheese
1/2 cup romano cheese, grated
1/2 pound mozzarella cheese, cubed
1 tablespoon extra virgin olive oil
Salt and pepper to taste
16 sheets frozen phyllo dough,
thawed

Spinach And Salmon Turnovers

What you will need for this variation:


1 small bunch fresh spinach
8 small salmon steaks, boneless and skinless 
1 shallot, finely chopped
1 teaspoon dill, finely chopped
1 teaspoon lemon juice
1 large egg
1 glove garlic, minced
1 cup ricotta cheese
1/2 cup romano cheese, grated
1/2 cup feta cheese, cubed
1 tablespoon extra virgin olive oil
16 sheets frozen phyllo dough,
thawed
Note: Phyllo dries out quickly, covering with a damp paper towel
will help keep them pliable

Lets get cooking:
Line a baking sheet with parchment paper and set aside
In a medium skillet over medium heat add olive oil
Sauté, onions, mushrooms and peppers
until softened, about 5 minutes,
 add garlic and sauté a minute longer 
Transfer to a large bowl, and cool
Add your egg, and cheeses
Salt and pepper to taste, about 1/2 tsp each
Fold mixture together

Place one sheet of your dough on working surface and brush with oil
Repeat with 3 more sheets, each on top of the other
Cut the dough stack in half lengthwise
Place 3/4 cup mixture on each stack at the short end
Fold the right corner diagonally over the mixture to create a triangle
Continue to fold diagonally until you reach the opposite end
Place turnovers on lightly oiled baking sheet
Brush each turnover with olive oil
Bake in preheated oven at 400 degrees
For 20-25 minutes, or until golden brown
Makes 8 turnovers
Serves four

For the Spinach and salmon variation:
Follow instructions as above
During the sauté process once your shallots
have become translucent, add spinach until wilted
Continue with directions above
adding dill and lemon juice to mixture


Bake in preheated oven at 400 degrees
For 40 minutes, covering lightly with foil after 30 minutes
Makes 8 turnovers
Serves four 

Pairings:
I like these with a Plum Brandy
This is a nice dry one-
