Spring Vegatable Sauté

What you will need:
1 teaspoons olive oil
1 teaspoon butter
4 cloves garlic, minced
8 ounces fresh spinach leaves
2 large red bell peppers, sliced
1/2 cup mushrooms
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup pine nuts, toasted
1/4 cup fetta cheese, crumbled
Lets get cooking:
Heat the oil and butter in a large skillet over medium-low heat
Add the garlic and cook for about 2 minutes
Now add peppers, continue to Sauté until soft
Add mushrooms, saute an additional 3 minutes or so
Increase heat to medium, add spinach
Add salt, pepper cover and cook, tossing occasionally, about 4 minutes
Remove from heat , add pine nuts and feta, toss lightly
