What's for Breakfast? Honey Banana Yogurt Pancakes and Blueberry Syrup

What you will need:
1 cup greek honey yougurt
1 large very ripe bannana, mashed
1 egg
1 cup of flour, sifted
1 cup of milk
1 teaspoon baking powder
Sea salt
2 tablespoons butter
1 lime
Let's get mixing:
Mix mashed bannana and yougurt, until wll blended
In a seperate large mixing bowl, add egg
Then add flour, baking powder, milk and a pinch of salt
Whisk together, until silky smooth
Add yougurt mixture, contnue to whisk until well combined
Let's get cooking:
Heat griddle to medium/high, lightly grease
Dispense batter onto griddle with a ladle, until bubbles form
Tip: Hold ladle close to surface as you pour batter for a more uniform shape
And fluffier pancakes
Flip and continue to cook to a golden brown about 2- 3 minutes
Makes four servings
Blueberry syrup
What you will need:
1-3/4 cups fresh blueberries, divided
1 cup corn syrup
1/2 teaspoon gresh ginger, minced
1 tablespoons lime juice
1 tablespoon cornstarch
Let's get cooking:
In a blender, combine 1 cup blueberries, ginger and corn syrup; until smooth
Place cornstarch in a small saucepan, slowly whisk in the blueberry mixture
Bring to a boil over medium heat, cook and stir until thickened
Remove from the heat; stir in the remaining blueberries and and lime juice cool
Should keep refrigerated for up to one week
