Here is a bit of a nutritious (yet tasty) recipe for a change! These muffins are great for a breakfast on the go!
2 cups of All Bran (or similar) cereal
1 cup of Bran Buds (or similar) cereal
1 cup of boiling water
2 cups of buttermilk
2 1/2 teaspoons of baking soda
1 cup of honey
2 eggs, beaten
1/2 cup of vegetable oil
2 cups of miller's bran
1 cup of flour
1/2 teaspoon of salt
Raisins or chopped dates (if you desire).
Mix both types of cereal together in the boiling water, and set the mixture aside.
Pour the buttermilk into a large mixing bowl, and mix in the baking soda, honey, eggs, oil, and then the cereal mixture.
In a separate bowl, combine the miller's bran, flour and salt. Then, add this mixture to the wet ingredients and beat all of it together.
Pur the mixture into greased muffin tins.
Bake the muffins at 375 degrees for twenty to twenty-five minutes, or until a toothpick inserted in the center of a muffin comes out clean (without any muffin mix on it).
Serve the muffins warm.
Makes approximately four dozen muffins.
Note: Cherries or blueberries will also go very well with these muffins. Also, note that mixture may be made ahead of time and stored in the refrigerator for about six weeks, so you can bake a small amount at a time if you prefer.
