What's For Dessert - Mother's Day Oatmeal Cookies

Oatmeal Cookies

3 eggs, beaten in a small bowl
1 cup of raisins
1 teaspoon of vanilla extract
1 cup of butter
1 cup of brown sugar
1 cup of granulated white sugar
2 1/2 cups of flour
1 teaspoon of salt
1 teaspoon of cinnamon (ground)
2 teaspoons of baking soda
2 cups of oatmeal 
3/4 cup of chopped nuts (such as pecans)

Add the raisins and vanilla to the bowl of eggs, and mix to combine.  Cover the bowl with plastic wrap, and let the mixture sit at room temperature for about an hour.
Cream the butter and both sugars (mix until fluffy), then add the other dry ingredients except the oatmeal and nuts (flour, salt, cinnamon, and baking soda) to butter/sugar mixture.
Next, blend the oatmeal and nuts into the wet mixture to form the dough.
Drop the dough onto an ungreased cookie sheet by heaping teaspoons, then roll each into small balls and flatten slightly.
Bake the cookies at 350 degrees for ten to twelve minutes or until golden brown.

Makes approximately six dozen cookies.

Note: you may also substitute the raisins for your favorite dried fruit, such as cranberries.
Delicious.  Secret is soaking of the raisins.
