Egg Croquettes
What you will need:
6 hard cooked eggs, chopped
2 tablespoons fresh parsley, chopped
2 tablespoons butter
1/2 cup scallion, finely chopped
1 medium garlic clove, chopped
2 tablespoons flour
1/2 cup milk
1/3 cup Edam cheese
, shredded
(Or other semi firm cheese)
1/4 teaspoon dry mustard
1/2 teaspoon nutmeg
Salt and pepper, to taste
1 1/2 cups coarse cracker crumbs
(Or bread crumbs)
2 eggs, slightly beaten
Let’s get cooking:
Heat butter in a saucepan, sauté shallots and garlic until tender
Stir in flour and gradually stir in milk
Cook, stirring constantly, until thickened
Add cheese, salt, pepper, nutmeg and mustard
Fold in the eggs and parsley, chill for about 2 to 3 hours
Form chilled mixture into 12 cylinder croquettes
Roll in cracker crumbs, then in beaten egg, then in cracker crumbs again
Fry in hot oil for about 2 minutes, or until golden browned
