Sweet and Spicy Cornbread
What you will need:
2 cups all-purpose flour
1 teaspoon baking powder
3/4 cup cornmeal
, coarse ground
1/2 tablespoon salt
1/2 cup milk
2 large eggs
3/4 6 tablespoons unsalted butter, softened
1/2 cup sugar
2 tablespoons vanilla syrup
(like you put in coffee)
2 tablespoons honey
1/2 cup cheddar cheese, shredded
1 jalapeno pepper, finely chopped and seeded
1 cup cooked corn kernels
Let's get baking:
With a hand held mixer, cream butter in a small bowl
Add sugar and continue to mix, until just incorporated
Add milk and eggs, blend until incorporated
In a separate bowl, combine flour, baking powder, cornmeal and salt
Mix with a whisk, until incorporated
In a third bowl,
On low speed, mix 1/3 of flour mixture
Add 1/3 of milk mixture and mix, continuing on low speed
Continue adding thirds of flour and milk mixtures alternately until gone
With a wooden spoon, stir in syrup, honey, cheese, jalapeño and corn kernels
(If batter seems dry, stir in additional milk)
Spoon batter into a greased 9x13 baking pan
Bake in a preheated 350 degree oven, until corn bread is golden, about 40 minutes
Allow cool slightly before cutting
