Banana Nut Bread
Here is a great recipe for a simple but tasty banana nut bread.
4 ripe bananas (as long as they are not rotten, the riper the better)
1 1/2 cups of flour
3/4 cup of sugar
3/4 cup of walnuts, chopped (you can substitute another soft nut, such as pecan, if you prefer, or make the bread without)
1 teaspoon of baking soda
1 teaspoon of vanilla (we used vanilla paste, but extract works fine)
1 egg, beaten
1/3 cup of butter, melted
A pinch of salt (we used sea salt, but fine kosher salt will work)
You will also need a 4" x 8" baking pan.
Preheat your oven to 350 degrees.
Mash the bananas in a mixing bowl, until there are no large chunks.
Next, add the butter, and mix together.
Add the egg, the vanilla, and the sugar, and mix these into the butter and banana mixture.
Mix the baking soda and salt into the mixture, then add the flour, and mix.
Once everything is mixed well, add the chopped nuts, and mix until everything is incorporated.
Butter your baking pan (or spray with cooking oil), then pour the mixture into the pan.
Bake for about an hour, then allow to cool thoroughly before slicing.
*Please note that baking times are different for various ovens. It is best to check the bread at fifteen, ten, and five minutes before the hour is over, to ensure that it does not burn. When the bread has reached a rich brown color, and a toothpick poked into the center comes out clean, the bread is done.
