The Ardent Epicure

An Ode to the Pleasures of Food

Caramelized Asian Pears with
Cayenne-Tinged Whipped Cream
OK, I will admit it, this was meant to be a
Memorial Day dessert
However I missed the boat on this one
As an artist I have found so many of our blogger friends posts
and photographs to be of such inspiration
So we are working on adding a bit more zeal with our photos
Sadly none of us are photographers, so it is trial and error

Caramelized Pears

What you will need:
4 tablespoons butter
1/2 cup packed brown sugar
4 Asian pears, sliced
1/4 teaspoon cloves, ground
1-2 pinches nutmeg, ground
1/4 teaspoon vanilla paste (or extract)
1 8-ounce mascarpone cheese

Let's get cooking:
Melt butter to bubbling
Sprinkle in sugar until melted
add pears until soft and caramelized
(Depending on the ripeness of pears 20-30 minutes)
Remove from pan and allow to cool a bit
Layer mascarpone onto a dish
Arrange pears as desired with a side of whipped cream

Cayenne-Tinged Whipped Cream

What you will need:
8 ounces heavy whipping cream
1/4 cup blue agave nectar (we use organic)
1/4 teaspoon almond extract
1/4 teaspoon cayenne pepper, ground

Let’s get mixing:
Add the cream, and whip quickly with a wire whisk, until slightly thickened
Now add the agave and almond extract
Continue to whip by hand, or with mixer on high speed
Add cayane a pinch at a time,
until desired flavor, continue to whip
Whip just until thick and creamy

Try a Petite Sarah Port or my favorite a lovely Sparkling White
