Here is a great recipe for a wonderful, moist cornbread full or delicious corn flavor!
1 1/2 cups of cornmeal
1 cup of flour
2/3 cup of granulated sugar (substitute light brown sugar for more of a molasses-style taste)
1 can of creamed corn
1 large egg (organic)
1/2 cup of butter (mostly melted)
2/3 cup of milk
3 1/2 teaspoons of baking powder
1 teaspoon of fine sea salt (or kosher salt)
*Tip - Try adding canned green chiles or jalapeños for added flavor
Preheat your oven to 400 degrees Fahrenheit
In a small bowl, lightly beat the egg.
In a mixing bowl, combine the dry ingredients (cornmeal, flour, sugar, salt, baking powder).
Add the egg and the other wet ingredients (butter, corn, milk), and combine.
Pour the batter into a greased round pan (a nine-inch cake or springform pan will do).
Bake for thirty to thirty-five minutes, or until the top is golden-brown, and a toothpick stuck in the center comes out without batter (be sure not to leave it long enough to burn the sides or bottom).
Slice and serve warm with butter or honey butter. Enjoy!
