Key Lime Bars
For our 200th post, we have some delicious key lime bars. Inspired by the ever-popular lemon bar, these tasty dessert bars have a powerful, tart key lime topping on a butter cookie crust. Yum!
2 cups plus 4 tablespoons of flour
2 sticks of unsalted butter
2 cups of granulated sugar
1/2 cup of powdered sugar (plus more for the top)
4 eggs, beaten
1/2 cup of key lime juice (about one small bag of key limes, juiced)
1 1/2 tablespoons of key lime zest
5 spearmint leaves, finely chopped (regular mint will work as well)
1 teaspoon of vanilla extract (we used vanilla bean paste)
Preheat your oven to 325 degrees.
In a mixing bowl, combine the 2 cups of flour, the butter, and the 1/2 cup of powdered sugar.
Place the mixture into a dry 9x13-inch baking pan, and pat it down evenly along the bottom.
Bake the crust for 15-18 minutes, or until it just starts to become golden and flaky. Check it often, and do not let it burn or become brown (keep in mind that it will be going back into the oven with the topping later).
In another mixing bowl, blend the granulated sugar, eggs, chopped mint, vanilla, lime juice, lime zest, and remaining flour, until well-mixed (a hand mixer works well for this).
Pour this mixture over the first layer evenly, and bake the entire pan for another about twenty minutes, or until the topping becomes gelatinous.
Chill in the refrigerator until it is entirely cool, then sprinkle with powdered sugar as desired.
