Oh my goodness! I really don't know what to say! This looks absolutely beautiful and delicious and something I wouldn't be able to stop eating, but then I see the word "beets". I love the look of beets, the color of beets, but I'm not crazy about the taste. However, I can see that maybe working it in with 85% cocoa might just be something I would enjoy. Talk about a challenge! I think I might have to accept this one myself. Great, great recipe!

I have been watching this make-over with keen interest because.... well... I'll just say it - I don't love beets. I try - I make them every year this way and the other. But I am thinking this sweet, rosy-tinged concoction may be just the thing to help me beat the beet.

This is beautiful and so incredibly creative! I've never had beet and chocolate together but I've heard it's magic. And that reduction sounds like something I could enjoy on just about anything!
